Manufacturing Process for Sausage
- Begin the process by grinding the pork using a ½ inch plate.
- Next, transfer the ground pork to a mixer. Add the seasoning blend, and mix the contents thoroughly for 2 minutes to ensure even distribution.
- After mixing, regrind the mixture using a 3/16 inch, 5/32 inch, or 1/8 inch plate, depending on your desired texture.
- Finally, package the mixture either in bulk or stuff it into casings for sausage links.
For optimal results, use pork butt or a butcher-provided 80/20 blend for the meat. If you're looking to create a sausage with a bit more spice, enhance the mixture by adding both ground red pepper and crushed red pepper—this will give your sausage that exciting 'extra heat'! Importantly, the blend is made without any MSG.
Each 9 oz. bag of seasoning is designed to properly season 25 lbs. of meat, and you will need 2 bags per order to achieve the right flavor profile.
